Our family farm in the Fauxquets valley has been the home of cider production since the 16th century and now the best of our cider from our regenerative orchards, is left to age on its lees before being distilled in our copper still, Elsa. The resultant spirit is then transferred to oak barrels where it matures for at least three years in our secure, purpose-built cellar. Only then is it bottled to capture its uniquely smooth, aromatic flavour.
